I AM sitting at a table with nine tasting glasses in front of me. Each one contains a transparent liquid with its own distinctive nose and flavour. "Take a first sniff a few inches from the glass, and swirl the spirit a little if you smell only alcohol," says my host. "What do you get? Try to think about its botanicals, imagine its country of origin. Are you getting any notes behind the alcohol?"

This is my first gin-tasting, organised by Blackwood Distillers. I am here to spend an afternoon learning about the different styles and flavours of gin, and so far it is reassuringly similar to a wine- tasting - except for the instructor. Mark Ridgwell, up from London for the day, doesn't spit. Watching him swallow glass after glass of 40 per cent alcohol without any obvious effect is an unnerving experience.
